Banana Raisin Cake Recipe

Taste this cake and you will be hooked. I tasted it and I can`t but fell in love with it. Its was yummy. I`ve never tasted a cake made with banana before so this increased my curiosity when she was baking it. Immediately she finished, she gave some to me and it was…..*paused*…..heavenly. I took some piece home for my hubby. When he took a bite, he got hooked too. In fact my mouth is watering even as i write this. Try this recipe am sure you will love it.

Ingredients:

150 grams-  Butter/Margarine

150 grams / 3/4cup-  Sugar‎

3-  Eggs

1 3/4 cup-  Flour

1 tsp-  Baking powder

1tsp-  Vanilla

3/4 – 1cup-  Over ripe bananas (mashed)

1/2 cup-  Hot milk

1/4 cup-  Raisins/ Dried mixed fruits – very well packed

1tsp-  Baking soda

Mise en place:

  • Pre heat oven to 350F, gas mark 4
  • Grease an 8″ round pan with margarine and dust with a little flour
  • Line bottom with parchment paper
  • Set aside

 Method:

  • Cream butter and sugar until light and fluffy
  • Add eggs one at a time
  • Sift flour and baking powder into a bowl add the raisins to it.
  • In a cup mix Slightly cooled hot milk with the baking soda thoroughly.
  • Add the mashed banana and vanilla to the creamed butter, mix together ‎very well
  • Add half flour mixture, combine well with the butter mixture, pour the milk mixture into it
  • Finally fold in remaining flour carefully
  • Do not over mix
  • Pour batter into prepared pan, tap gently to remove bubbles
  • Bake for 45-50mins, or until cake test done
